Sundried Tomato Pesto Grilled Cheese Sandwich
This is another indulgent, adult grilled cheese sandwich recipe. I have substituted brie, swiss, and monterey jack cheese for the mozzarella. It all depends upon what I have in the house or what I am craving. This is a simple recipe that is especially good served with a tossed salad or a cup of soup. These sandwiches are even good enough to serve to guests!
Ingredients
- 3 tablespoons sun dried tomato pesto
- 1 slice mozzarella cheese
- 1 handful basil leaves
- 2 slices bread
- 1 tablespoon butter
Directions
- Assemble sandwich and grill until the cheese has melted and the bread is golden brown on both sides, about 2-4 minutes per side.
Sun Dried Tomato Pesto

Ingredients
- 1/2 cup sun dried tomatoes (without the oil they are packed in)
- 2 tablespoons fresh basil leaves
- 1 clove garlic
- 2 tablespoons pine nuts (toasted)
- 2 tablespoons parmigiano reggiano grated cheese
- 3 tablespoons olive oil (or oil from sun dried tomatoes)
- salt and pepper to taste
Directions
- Place everything into a food processor and puree.
